Mary Ann was in the Island Register family tree, the Descendants of William Dymont/Diamond and Joan Mortimer. Although her name was given as Mary Ann Dyment in a son's obituary, and she lived in Prince County, she doesn't seem to have been directly related to "my" Dyments:
She was the daughter of John Raymond Diamond and Margaret Ross, who were married 27 Aug 1833 by Rev. Dr. Louis Charles Jenkins of St. Paul's Anglican Church, Charlottetown, P.E.I.

She married (1) George Proud and in 1877, (2) Caleb Sentner, born 20 Jan 1817 in Prince Edward Island, son of Caleb Sentner and Mary Judson, died 30 Nov 1901 in Roseville (Lots 3 and 4), Prince, Prince Edward Island (9 mi W of Alberton).
Neither George Proud nor Caleb Sentner were in the 1861 census. All of the children in the PEI Baptismal Index for Mary Ann Diamond and Caleb Sentner were baptized on the same day.
